Vanilla Squares With Peaches & Nectarines
Ingredients:
Bottom dough:
5 dl flour
2 dl sugar
2 tablespoons vanilla sugar
2 teaspoons baking powder
250 g butter
Peach and nectarine filling:
6 peaches
6 nectarines
1 tablespoon sugar
1 tablespoon corn starch
Vanilla filling:
4 eggs
3 dl sugar
6 dl crème fraîche
1 tablespoon vanilla paste
Crumble topping (same as bottom dough):
5 dl flour
2 dl sugar
2 tablespoons vanilla sugar
2 teaspoons baking powder
250 g butter
Topping:
2 tablespoons powdered sugar
Directions:
Have all the ingredients for the bottom dough in a food processor. Run the mixture together so that the butter crumbles well will the dry ingredients. Dress a tray pan (30 x 40 cm) with baking paper. Press the dough evenly into the bottom of the pan.
Clean the fruits and divide them into cubes. Spread the pieces over the dough in the pan.
Whisk togheter the ingredients of the vanillla filling. Pour it over the fruit in the pan.
Have all the ingredients for the crumble topping in a food processor. Just as with the bottom dough, run the mixture together so that the butter crumbles well will the dry ingredients. Crumble the dough over the vanilla and fruit in the pan so that you cover most of the filling.
Bake the cake in the middle of the oven at 200 °C for about 30 minutes. Let the cake cool in the pan until it is completely cold before cutting it into squares.
Dust with some powdered sugar just before serving.
